BBQ Chicken Pizza

This is a great week night dinner that makes use of leftover BBQ chicken. If you’re really in a pinch for time you can used store-bought dough, but if you have a mixer or food processor this recipe comes together pretty quick.

For the dough (makes 2 crusts)
  1. 1 tsp Instant Or Active Dry Yeast
  2. 1-1/2 cup Warm Water
  3. 4 cups All-purpose Flour
  4. 1 tsp Kosher Salt
  5. 1/3 cup Olive Oil
For the Pizza
  1. TASTE OF THE OKANAGAN PEACH CHIPOTLE BBQ SAUCE
  2. 2 cups leftover BBQ Chicken (or cooked chicken breasts, or store bought rotisserie chicken)
  3. 2 cups shredded smoked Gouda Cheese
  4. 1/2 whole Red Onion, Cut In Half And Sliced Very Thin
  5. Chopped Cilantro, to taste
  6. Olive Oil
  7. Salt
For the dough
  1. Sprinkle yeast over 1 1/2 cups warm (not lukewarm) water. Let stand for a few minutes.
  2. In a mixer or food processor, combine flour and salt.
  3. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour.
  4. Pour in yeast/water mixture and mix until just combined, and the dough comes together in a sticky ball.
  5. Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and set it aside for 1 to 2 hours, or store in the fridge until you need it.
For the Pizza
  1. Preheat oven to 500 degrees.
  2. Roll/stretch out one pizza crust at a time. Lay it on a sheet pan drizzled with olive oil.
  3. Drizzle a little olive oil on the crust, then sprinkle on a little salt.
  4. Spoon a couple of tablespoons of TASTE OF THE OKANAGAN PEACH CHIPOTLE BBQ SAUCE sauce on the crust and spread it evenly.
  5. Top sauce with half the smoked gouda cheese.
  6. Sprinkle on half the diced chicken and thinly sliced red onion.
  7. Bake for 15 to 17 minutes, or until crust is golden brown and toppings are bubbly.
  8. Remove from the oven and sprinkle on plenty of chopped cilantro.
  9. Cut into squares and serve immediately.
  10. Repeat.
