Beer Cheese Muffins

We’ve taken classic beer bread and turned it into single serve muffins. Gooey cheese and roasted garlic paired with your favourite beer, these muffins are great any time of the day. Serve them with a hearty stew, spicy chili or even part of your breakfast spread. Yes, now you can have beer for breakfast.

Ingredients
  1. 1 head garlic
  2. 1 tablespoon olive oil
  3. 1/2 cup butter milk (Whole milk works too)
  4. 1/2 cup TREE BREWING THIRSTY BEAVER AMBER ALE
  5. 2 large eggs
  6. 3 tablespoons unsalted butter, melted
  7. 2 cup freshly grated aged cheddar (don’t use preshredded)
  8. 2 cups all-purpose flour
  9. 2 teaspoons baking powder
  10. 1 tablespoon sugar
  11. 2 tablespoons TASTE OF THE OKANAGAN MAGIC SEASONING
Instructions
  1. Preheat oven to 425°F
  2. Cut the tip off the head of garlic, exposing the cloves. Place on a small sheet of tinfoil and drizzle with olive oil. Wrap tinfoil to form a tight packet and roast for 30 minutes, or until cloves are soft and amber coloured. Set aside to cool.
  3. Lower oven to 350°F.
  4. In a large bowl wish together milk, beer & eggs. Add the butter and whisk. Squeeze the head of garlic until the cloves have all come out. Add to bowl and whisk until all the cloves are broken up and well combined. Add the cheese and stir.
  5. Sprinkle the flour, baking powder, sugar, salt, and TASTE OF THE OKANAGAN MAGIC SEASONING into the bowl; gently stir, being careful not to over mix.
  6. Brush a muffin tin with melted butter, or spray with cooking spray.
  7. Spoon batter into muffin tins until about 2/3 full.
  8. Place in oven. Lower temperature to 325°F and bake for 20-25 minutes.

Ingredients
  1. 1 sheet of frozen puff pastry, thawed
  2. 1/3 cup TASTE OF THE OKANAGAN OLIVE TAPENADE
  3. 1/2 cup grated Parmesan cheese
  4. 1 egg
Instructions
  1. Preheat oven to 375°F
  2. Roll thawed puff pastry into a thin rectangle.
  3. Spread tapenade thinly over one half (try to keep the liquid to a minimum). Sprinkle with grated cheese.
  4. Brush other half with beaten egg and fold over tapenade. Press down, then cut the pastry into 2 cm thick strips.
  5. Twist each strip and place on a lined baking sheet. Brush with a little egg and bake for 18-20 mins until the twists are golden and crisp.
  6. Cool on a wire rack and serve.

Orchard Chutney Sausage Puffs

These savoury little bites make a great appetizer for a big crowd. They are delicious when served warm, straight out of the oven, but are still great when served at room temperature. I made them in a mini-muffin tin, but you could make them a little larger and they’d make a great brunch dish.

Ingredients
  1. 2 Italian Sausage Links
  2. 1 can Pillsbury Original Crescent Rolls
  3. 1/4 TASTE OF THE OKANAGAN ORCHARD CHUTNEY
  4. 100g shredded Havarti Cheese
Instructions
  1. Preheat oven to 375°F.
  2. Remove sausage from casings and fry until cooked.
  3. While sausage is cooking, open can of cresent rolls and unroll. Do not seperate, instead pinch the seams together, to form one rectangle. Cut rectangle into 24 small squares (they don't need to be exact). Line each cup of 2 mini-muffin pans with pastry squares.
  4. Add 1/2 teaspoon of TASTE OF THE OKANAGAN ORCHARD CHUTNEY to each muffin cup. Top with cooked sausage and a sprinkle of grated cheese.
  5. Bake sausage puffs for 15-20 minutes or until golden brown.

It’s football season, and we’re gearing up for the big game. Grey Cup is this weekend so I thought it would be fun to share some game-day snacks that are great for a crowd. First up Spicy Beer Cheese Dip.

  1. 2 cups shredded sharp cheddar cheese
  2. 1 cup shredded mozzarella cheese
  3. 8 oz. cream cheese
  4. ½ cup light-medium beer
  5. 1 jalapeno pepper, finely diced
  6. 2 tbsp TASTE OF THE OKANAGAN SOUTH OF THE BORDER SEASONING
Instructions
  1. Combine beer, cheeses, jalapeno pepper and TASTE OF THE OKANAGAN SOUTH OF THE BORDER SEASONING in a sauce pan or pot over medium-high heat.
  2. Melt down the cheese mixture and stir until it is smooth, about 5 minutes.
  3. Once mixture is smooth and velvety, remove it from the heat and pour it into a serving bowl.

Sausage & Apple Chutney Pies

Fall flavours abound in these flakey sausage and apple chutney hand pies. Sweet italian sausage, and smoked gouda cheese combined with our apple chutney make these pies perfect for the cooler weather on the way. They can be eaten as a main meal or a quick snack pretty much any time of day.

Ingredients
  1. 3 sheets puff pastry (1 1/2 boxes)
  2. 1 lbs sausage
  3. 1/2 large onion, diced
  4. 1 clove garlic, minced
  5. 1/2 cup smoked gouda cheese
  6. 1/4 cup TASTE OF THE OKANAGAN APPLE CHUTNEY plus more for serving
  7. 1 egg
Instructions
  1. Thaw puff pastry according to package directions.
  2. Preheat oven to 375°.
  3. Heat one tablespoon oil in a large pan and add onion. Cook until translucent. Add sausage and garlic. As sausage cooks, break into very small pieces. Cook until sausage is no longer pink. Strain off any excess grease.
  4. in a bowl combine sausage mixture, TASTE OF THE OKANAGAN APPLE CHUTNEY and cheese. Stir until all ingredients are evenly distributed.
  5. Roll each thawed puff pastry sheet into approx. a 13"x13" square and cut into 4 quarters.
  6. Spoon 1/12 of the mixture onto the corner of one square and fold over to form triangle.
  7. Using a fork pinch edges to secure filling inside.
  8. Repeat to make 12 triangles.
  9. In a small bowl, whisk egg with 1 tablespoon of water.
  10. Brush each triangle with egg wash and transfer to a baking sheet lined with parchment paper.
  11. Bake in preheated oven for approximately 25 minutes or until golden brown.
  12. Serve with extra chutney for dipping.
