Easter Pork Rib Roast with Garlic Chutney

Instead of a typical ham recipe for Easter, I thought it would be nice to try something a little different. Something that’s easy, impressive and affordable. This Pork Rib Roast will elicit oohs and ahh’s from your guests as it’s pulled from the oven, and the juicy, tender meat will have them coming back for seconds.

Ingredients
  1. 1 (4- or 5-bone) bone-in pork loin roast (about 5 pounds)
  2. TASTE OF THE OKANAGAN GARLIC CHUTNEY
Instructions
  1. Preheat oven to 250°F and adjust oven rack to centre position.
  2. Rub pork roast with TASTE OF THE OKANAGAN GARLIC CHUTNEY
  3. Place pork on a wire rack set in a rimmed baking sheet. Transfer to oven and roast until internal temperature reaches 140°F, about 2 hours. (Slow roasting ensure the pork is cooked evenly throughout) Remove from oven and tent with foil for at least 15 minutes and up to 45 minutes. (This is a great time to get the rest of your meal ready, roast potatoes, and sautéd green beans make great sides)
  4. After resting Increase oven temperature to 500°F.
  5. Return roast to oven and cook until crisp and browned on the exterior, about 10 minutes. Be sure to keep an eye on it as the raisin in the chutney easily burn. Remove from oven, tent with foil, and allow to rest for 15 minutes.
  6. Carve roast by slicing between each rib and serve.

Roast Beef Sandwich with Garlic Chutney

We love sandwiches in our house, they’re quick, easy to make, and delicious… especially when you add a little bit of Chutney.  If you’ve never tried chutney on a sandwich you may be thinking it’s kind of a strange thing to put on a sandwich, but trust — it’ll revolutionize your sandwiches!

Ingredients
  1. 1 soft white hoagie roll
  2. 1 tbsp TASTE OF THE OKANAGAN BREWHOUSE STONED MUSTARD
  3. 1 tbsp TASTE OF THE OKANAGAN GARLIC CHUTNEY
  4. 3 ounces thinly sliced deli roast beef (such as Boar's Head)
  5. 1-2 slices of thinly silced Havarti cheese
  6. 2 (1/4-inch-thick) slices tomato
  7. 1 small handful of loosely packed arugula
  8. Few pieces of thinly sliced red onion
Instructions
  1. Spread TASTE OF THE OKANAGAN BREWHOUSE STONED MUSTARD on the top of the bun and TASTE OF THE OKANAGAN GARLIC CHUTNEY on the bottom.
  2. Layer roast beef evenly over bottom half of the bun.
  3. Top with cheese, tomatoes, arugula, onion and the top of the bun.

Lamb Burgers

Everyone loves a good beef burger, but why not mix it up and throw something different on the grill. Try this lamb burger: meaty and juicy, topped with yummy feta, lettuce and our sweet and savory Garlic Chutney.

For the burgers
  1. 1 lb. Ground Lamb
  2. ½ Lemon Juice & Zest
  3. 2 Garlic Cloves Minced
  4. 1 Small Onion Diced
  5. 1/3 Cup Toasted Pine Nuts (Fry in a dry skillet over medium heat until brown)
  6. ½ Tsp. Kosher Salt
  7. ½ Tsp. Ground Cinnamon
  8. 1 Egg Slightly Beaten
  9. ½ Cup Bread Crumbs
  10. ¼ Cup Parsley
To Assemble
  1. 4 Whole Wheat Pita Bread
  2. Lettuce
  3. 4 tbs TASTE OF THE OKANAGAN GARLIC CHUTNEY
  4. Crumbled Feta Cheese
Instructions
  1. Mix the ground lamb with the rest of the burger ingredients and form into 4 patties.
  2. Pan fry or BBQ until brown on both sides about 4 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).
  3. Spread the pita bread with mayonnaise and TASTE OF THE OKANAGAN GARLIC CHUTNEY.
  4. Add roasted red peppers and crumbled little Feta Cheese and top with the lamb patty.
