Breakfast Tacos with South of the Border Crema

INGREDIENTS

For the crema:
½ cup sour cream
½ cup mayonnaise
Juice of 1 lime
2 tablespoons Taste of the Okanagan South of the Border Seasoning

For the tacos:
1 pound ground sausage or vegan sausage
1 tablespoon Taste of the Okanagan South of the Border Seasoning
2 Roma tomatoes, diced
8 small tortillas
2 avocados
8 eggs
½ cup cotija cheese, grated or substitute feta

To make crema, in a medium-sized bowl whisk all ingredients together until combined. Cover and let sit at room temperature while you make the tacos.

Heat a large nonstick skillet over medium heat and sauté sausage until cooked through. Season with Taste of the Okanagan South of the Border Seasoning.

Heat tortillas in a cast-iron skillet over medium-high heat, with no oil. Set aside and keep warm.

To cook eggs, heat a nonstick skillet over medium heat. Melt butter and add eggs. Season eggs with more South of the Border Seasoning. Use a small spoon to baste the eggs with the melted butter. Cook until the whites have set and the yolks are the desired doneness.

While eggs are cooking, slice the avocado and dice the tomatoes 

To assemble tacos, top the tortillas with sausage and the fried egg, and sprinkle with tomatoes and cheese cheese. Add the avocado and drizzle with the South of the Border Crema.

A couple weeks ago we got together with some rad l A couple weeks ago we got together with some rad local ladies to brew a delicious sour ale for International Woman's Day.  Each week this month, it's being served up with a different flavour shot @kettleriverbrew . 

The ladies from @provisionsatkettle kicked things off last week with their traditional raspberry syrup and this week we're getting a little crazy with our Spicy Peach & Apricot Syrup. 

Check it out from Wednesday til Sunday and definitely don't miss the @crasianfoodtruck Taco Takeover on Saturday night where you can pair this spicy brew with their killer tacos! (Details at the link in our bio)

@borntoshake + @chaibaba_kelowna will be rounding out the month with 2 more unique syrups in case you need an excuse to have a pint each week!

Dreaming of summer ☀️, ripe tomatoes from the Dreaming of summer ☀️, ripe tomatoes from the garden 🍅, and this twist on a panzanella salad 🥗.

// Rustic Tomato Salad with Olive Tapenade

•½ loaf of a rustic Italian bread (I used Ciabatta) 
• Extra virgin olive oil
• Kosher salt
• 2 lb ripe tomatoes (I like a mix of colours and sizes)
• ¼ cup red wine vinegar
• ½ cup Taste of the Okanagan Olive Tapenade
• 2 small shallots
• ½ cup packed fresh basil torn
• 4 oz fresh mozzarella optional (more to your liking)

Heat the oven to 400 degrees F.

Tear bread into rustic bite-sized peices. In a large mixing bowl, combine bread with a generous drizzle of extra virgin olive oil and a big pinch of kosher salt. Toss to make sure the bread is well coated (save the bowl for later). Spread the bread on a sheet pan and bake in heated oven for about 10 minutes or until golden (the edges should get crisp, while the bread gains some color and crisp but remains still a bit chewy).

While the bread is toasting prepare your tomatoes. When using heirloom tomatoes, we like to slice them in a variety of ways to show off their incredible detail and colour. Longer tomatoes are best when quartered lengthways while rounder tomatoes look pretty when sliced horizontally across the centre. Play around with the different shapes and place in the same bowl you tossed your bread in. Sprinkle with salt and let sit for a few minutes. 

Add red wine vinegar, ½ cup extra virgin olive oil, and Olive Tapenade to a small bowl. Whisk to combine.

Thinly slice the shallots and tear mozzarella into bite-sized pieces. Add them to the bowl of tomatoes along with the toasted bread and basil. Toss well with the dressing making sure to incorporate the tomato water at the bottom of the bowl.  Allow the salad to sit for 20-30 minutes then transfer to a platter to serve.
